The shells basically fall off with this method

I used to dread peeling eggs.

For real, I would avoid it but a few years ago I learned this method and haven’t looked back. It’s so easy! So, I’ve always had at least one or two eggs crack no matter which method I’ve used over the years. The feedback in the hundreds of comments this has gotten on Instagram is mixed, but I have had several actual chef’s comment that this is the only way they boil eggs. So, there’s that.

The Method

I boil the water first. Then gently drop the eggs into the boiling water, when the cold or room temp egg hits the boiling water the white of the egg is pulled away from the shell, making the shell basically fall off after it’s done. I boil them for about 10 minutes then remove from the heat. I generally drain the water, add some cool water and throw some ice in there for a few minutes. But sometimes I just leave the pot to cool, and it’s fine. I crack it a few times on the counter and the shell comes right off and the yolk is perfectly yellow!
