Gluten Free Mini Pancakes: All Day Every Day: Three ways!

Do you need more flexible Gluten Free food options for your kid?
Feeding kids who are gluten free can be a challenge. A few months ago I had an epiphany while making our normal Friday night breakfast for dinner. Make mini pancakes to fit in our jars we use to portion out breakfasts and snacks. Genius!
Then I remembered seeing somewhere that someone turns these mini pancakes into pancake sandwiches with jelly. Um, SO smart! They pack great for school lunches, and are great for snacks too.



How We Serve them
We serve them warmed in the jar with syrup over them, and as sandwiches with jelly, and on our dinner plate with all of the breakfast fixings. I can’t leave you without sharing our favorite Gluten Free pancake mix. Guys. Its the Walmart brand. And it is SO good! I use dairy free milk to make it mostly dairy free and I add vanilla and cinnamon into it. Amazing.
